    Breakfast egg rolls

    1 lb hot Jimmy Dean sausage

    2 cups shredded sharp cheddar

    1 small sweet onion

    1 bell pepper

    Garlic powder

    Salt and pepper

    3 small potatoes shredded, or 1 1/2 cup frozen hash browns

    Medium Pack of mushrooms

    6 large eggs

    Egg rolls wrappers

    Vegetable oil for frying

    Country crock margarine

    Brown sausage, bell pepper, onions, and mushrooms in country crock. Season with garlic powder, salt, and pepper. Set aside.Cook hashbrowns in country crock until crispy. Cook eggs until almost done. Combine everything together and add shredded cheese. Mix and portion into egg roll wrappers. Fry for 5 minutes on each side in 350 degree oil. This recipe made 20 egg rolls for me.Freeze and thaw in fridge the night before you eat. Cook at 350 for 10 min in air fryer.
