Pilaf & Ayran is a typical Turkish meal. It’s something that our grandmothers make for us.
In this video first I took you to my favorite spot to get street food style rice and went to the kitchen to make a more delicious version.
Ingredients for Turkish Pilaf
2 tablespoon Olive Oil
2 tablespoons Butter
2 tablespoons Vermicelli
2 cups Baldo Rice
3 cups Chicken Stock
1 Chicken Thigh (cook)
1 cup cooked (canned) Chickpeas
Ingredients for Turkish Ayran
1 cup Yoghurt
2 cups Water

Thanks for not pouring ketchup on your pilav, which must be a serious culinary crime. Yoğurt , asTurkish people like, or ayran is a taste almost impossible to be liked by Westerners. Yoğurt with no sweetness and thick in texture, and ayran are something unimaginable for them. What a miss!
It’s really hard to find baldo rice, which is the best type for Turkish style pilav, in the US. Even if you find it, it’ s much more expensive than other types of rice that you can find in any supermarket. Among those, the next best type is calrose. Don’t bother with basmati rice unless you want to cook Indian style pilav/f. For calrose medium grain, water(or broth)/rice ratio is 2/1.

Very nice video. One recommendation, don't wear bell sleeves around the cook top. If you wear this style sleeve, secure them with a elastic band. This is for safety so they don't catch fire.
What other type of rice can replace Baldo?
