watching Justin, Julia, Paul Prudhomme, and Grahame Kerr while working for PBS back in the 70's. As with your fine talent, I'm always amused, educated and left feeling at-home in your company, and you homage was delightful and so kind.

What a great video. I've noticed that heat kills the taste of smoked paprika. Try putting it in right before serving and notice the difference.

It's not gumbo no jalapeños or celery
A year later and this is still a hit with my family lol. Even my daughter loves it. The sausage is the best part
Justin would be proud of what you did in this Tribute to him.🧑🍳 I met him once; VERY Nice man. I stood in line to Meet him and Shake his hand… Told him I was sorry I couldn't afford a Ticket to watch him speak at the Dinner that was about to take place and he pointed to a corner by where they were serving Beer and said: "Just stand over there; you'll be fine there" I thanked him, shook his hand and wished him Good Luck with his presentation. That was in the 70's and I remember it Clearly to this day. I used to watch him on PBS. Kent reminds me a LOT of Justin((HUGS))

Hi Kent, BIG thanks for making and sharing this film. This recipe is a real winner. 4 home runs out of 4, works every time. Andouille sausage is impossible to get in Amsterdam Netherlands, so I smoke my own with oak wood-chips in the BBQ. Well worth the effort to make this Gumbo, taste is amazing. Reminds me of my holiday in New Orleans every time I have a bowl, a flavor I thought I would never be lucky enough to taste ever again is made possible by following this recipe. So many thanks Cowboy Kent. (Justin Willson would be well proud of you I reckon)
Forgot the celery in the holy trinity

Alright Kent, not bad, I was always taught to use celery instead of bell pepper, BUT 2 things! Number one put it in a bowl and just one scoop of rice! And #2 I didn’t see you put any filé on it at the end, or as some call it, the dirt, gotta put the dirt on it
Should have had celery to make the trinity in the roux. Also, where is your okra? That's what gumbo is based on.

Gonna take more than 5 minutes to get those chunky onions to get transparent. When cooking the holy Trinity, cook for at least 30 minutes.

I'm proud to be of a long Cajun heritage. This thumbnail had me worried but I must give credit that was a very decent Cajun gumbo. There is always an argument about tomatoes. Is you would have put some it still would have been gumbo just not Cajun. Tomato is usually found in Creole gumbo. Both generally from the same geographic area both very different cultures. Good job and thanks.👍
But where is the okra?
Ya missed the "Trinity " by omitting the Celery, but otherwise ya got everything else.
