So I pretty much followed this [recipe](https://simplygratefulcanning.wordpress.com/2015/08/25/preserving-plum-pulp-for-future-projects/) (I didn’t realize some recipes are not “tested” before arriving here, not sure if this is or not). My plums exploded and were crushed and strained by hand, so a little different, and I also processed for 2x the time since I put them in with nectarines at 4000 ft altitude. The plum variety is probably very different since they are yellow and super sweet and sour (almost taste like sour patch kids). This may have overproccesed them since the pulp separated from the juice and foamed up, spilling out of the top and eliminating the headspace in a sense. (See pic). So when I tapped the to see if the seal formed, i did not hear the usual ring I expect. So I refrigerate them and plan to freeze the nectar instead. However when I open one, I find that a seal has formed as I got the little pop of pressure I get when opening up a sealed container. I find that all the jars seem to have been sealed, though I cannot get auditory confirmation. So my plan was to assume they have and when using each one, make sure I feel the seal breaking (or else throw it away). And experience with this particular issue?
