INGREDIENTS:
🔹 2 to 3 eggplants (about 1 ½ pounds), sliced lengthwise into ½-inch thick slices (about 12 slices)
🔹 Extra virgin olive oil
🔹 Kosher salt
🔹 1 large egg
🔹 1 15-oz tub part-skim ricotta cheese
🔹 1 ½ cup park-skim mozzarella cheese divided
🔹 ½ cup grated Parmesan cheese divided
🔹 3 garlic cloves minced
🔹 1 teaspoon dried oregano
🔹 10 oz frozen spinach, thawed and fully dried (wring out all the water)
🔹 1 cup packed chopped fresh parsley
🔹 ½ cup packed chopped fresh basil ⅔ ounce
🔹 Black pepper to your liking
🔹 2 cups prepared pasta sauce of choice (Homemade or store-bought)

  2. 100%, the eggplant needs to be salted, rinsed, and dried to remove the acid-bad flavor. This dish looks great, but why use frozen spinach when you can use fresh?. Made this KETO version many times before, I like to drizzle on some olive oil right out of the oven. This meal goes good with a nice bottle of red wine too 👍

  5. That's not lasagne. The word, lasagne, refers to a specific cut of pasta–not the layered dish you've presented. That is an eggplant napoleon.

    Spaghetti, macaroni, lasagne, fettucine, conchiglie, et al. refer to the type of pasta used in the dish–nothing more.

Eggplant after salt need to drain the liquid in a colander I live for few hours then patted dry and fry no oven then put in oven sauce mozzarella grated cheese again same thing sauce mozzarella grated cheese if want make more filling add a thin slice of potato over eggplant and voila this If not like ricotta we no make lasagna pasta here
