I’ve tried a bunch of low-calorie pizza crusts(pita bread, egg based, tortilla, Lavash bread), and every time, they just make me wanting real pizza, and never leave me fully satisfied. I finally figured out a great pizza crust that is thin and crispy, but also has a little substance to it. The crust itself is ~190 cals(so a little higher than the alternatives), but, in my opinion, is miles ahead and so much more satisfying. And even better it was super fast and easy.
For the crust, I mixed 2 tablespoons of flour with around 1/2 tsp of baking powder and 1/2 tsp of salt. Then I thickened that mixture with water to the consistency of pancake batter.
In a nonstick pan, I added 1 mission Low-carb tortilla. Then I took the flour mixture and spread it in an even layover over the tortilla. And then, I covered that with another tortilla(I would imagine if you want fewer calories, you could omit the second tortilla, but I don’t think I ever will).
I cooked that until the bottom started browning , then flipped it, added the American cheese, chicken(it was a lot of chicken, next time I would reduce it. Just wanted the get my protein in), sauce(which was a mixture of generic pasta sauce and Ray’s BBQ sauce), and grated Parmesan cheese. Covered that and cooked it on low/medium low until the bottom was nice and browned.
Next time, I think I want to try a more traditional pizza using this crust. I figure if I used a pizza sauce, turkey pepperoni, Parmesan and fat free mozzarella, it would be around 450/500 cals. Also I’d put it in the over to get the cheese more melty. It was just easier cooking it in a pan.
I’m more of a lurker and don’t typically post on Reddit, but this was something I figured I had to share for anyone craving pizza and the alternatives just haven’t been cutting it.
