EatWith chef Michail cooks up tender young rooster in an open-air, rooftop kitchen in Athens, Greece. He was kind enough to show me how he makes his signature recipe for Corfu Pastitsada with Free-range Rooster and Pasta. It includes simple, fresh ingredients, wonderful spices, and a glass of wine. My husband, Rich, did much of the camera work, but Michail’s co-host, Nikos Thomopoulos, who is trained as a filmmaker, volunteered to help with the videography; most of the best shots are his.
