I’m pregnant and *really* want pot roast veggies, the meat I could unfortunately at the moment do without. I wasn’t able to get this on until 1 pm though so unfortunately I’m going high for 4.5-5 hours on a 1.7lb chuck roast. I really hope this turns out well. My husband told me to go for it anyway as I’m having trouble eating so if I want something I should just get it while it sounds good.
I placed a bunch of baby carrots, 3/4 sliced white onion, and 2 chopped celery stalks as a bed with a nest of quartered gold potatoes. I covered the seared roast with roughly minced garlic, onion soup mix, and half a stick of butter. Everything is seasoned with salt pepper and an herb blend. For the broth I went with a mix of chicken and beef and a little Worcestershire sauce and stirred in an au jus packet. Roast is mostly sitting above the broth/sauce mix but is still touching.
Has anyone had decent results for mouthfeel and flavor cooking pot roast on high? I always go low and slow and I will feel bad if my kid and husband don’t care for the meat
