This Authentic Greek Salad Recipe with Feta Cheese and Homemade Vinaigrette is a
Classic! Healthy and Keto Friendly.

Recipe:

Cucumber – 1 Large

Tomatoes – 2 to 3

Yellow Bell Pepper – 1 Large

Shallot – 1 Medium

Kalamata Olives – 1/2 of a cup

Feta Cheese – 4 ounces

Dressing:

Extra Virgin Olive oil- 1/2 of a cup

The juice of 1 Lemon

Dried Oregano – 1/2 of a teaspoon

Salt and Pepper – 1/2 of a teaspoon of each

Directions:

Chop cucumbers and tomatoes into equal bite sized pieces. Cut your bell pepper in half lengthwise and remove the stem and seeds. Chop the bell pepper into one inch pieces. Cut the shallot in half and slice thinly. Now, cut the Feta cheese into one inch cubes. Add olives to the bowl.

For the dressing:

In a Mason jar, pour 1/2 of a cup of Extra Virgin Olive Oil, the juice of 1 lemon, add dried oregano and Salt and Pepper.
Screw the lid on the jar tightly and shake until well combined.

Pour the dressing over the salad until it just coats the vegetables. You will have some dressing left over (refrigerate for up to 2 weeks). Toss the salad until the dressing coats all of the vegetables and Feta cheese. Enjoy and Happy Eating!!!
