The new KFC chicken sandwich is on fire. It’s selling twice as fast as previous sandwiches they’ve released, and for good reason: it’s a great sandwich. But, why not learn how to make your own crispy chicken sandwich? Homemade, of course. The key to perfecting this type of sandwich? The breading. If you’ve ever had Popeye’s, you know their sandwich has an iconic crispy breading unlike anything else out there. KFC has now gotten dangerously close to this territory, using what looks to be the exact same breading technique. Allow me to explain:

In order to get the crispy bits on the edges, you make a slightly granular and chunky breading by simply mixing in just a bit of your wet brine (the buttermilk, for instance), into your dry mixture (the flour, potato starch, or whatever it is you decide to use). Once you stir this up, it makes small clumpy bits such that when you go to dredge the chicken, you get little bits of starch on the edges that will give a beautiful look and texture to your finished product. Try it out. You got this.

Brioche Buns:
1/4 cup whole milk
2 tbsp bread flour
2 tbsp water
3/4 cup warm milk
2 1/2 tbsp sugar
1 tbsp active dry yeast
3 1/4 cups bread flour
1 pinch salt
1 egg + 1 yolk
3 tbsp unsalted butter
Egg wash

Chicken:
6 chicken breasts
3 cups buttermilk
1 pinch salt
Garlic powder
Onion Powder
Oregano
Basil
Paprika
Pepper

Dredge:
3 cups potato starch
Salt and pepper
Paprika
+ Buttermilk

Pickle:
Any good quick pickle recipe should do the trick! If you’re lazy, you can just can just heat vinegar and a pinch of sugar until the sugar dissolves, then pour it over pre sliced cucumbers and let it cool in fridge. Done!

  4. I may try the potato starch approach, I dunno yet, potato starch isn't easy to find where I am.
    Put aside that this chicken sandwich seems closer to what I was looking for than all the rest, (except where are the 11 herbs and spices?) and that I will definitely subscribe now that I found out there's a chef that doesn't like a lot of spice (heat) in his food…..it just seems to me like he is trying to imitate Josh Weissman with his cooking antics and sense of humor. Maybe I am wrong, but I had to look at the name twice to make sure it wasn't Josh when I just listened to the video.

  5. I 100% agree with Nick. I think the KFC sandwich is better but Popeyes is more consistent while KFC is hit or miss.

  6. funny story abt colonel sanders my step mom actually got into a car crash with him nothing big just a little love tap on the back of his car with hers. Aparrently he told her not to feel bad becuase it wasnt his car.
