Canned up some tomatoes, just did a puree to use as a base for other things, but forgot to add the 1/4tsp citric acid/pt. I know this isn’t ideal, but how bad is it? No use? Use quickly? Open em layer and see what they look like? How dead am I?

    So you have 24 hours to reprocess canned goods . So if it hasn’t been 24 hours yet . I would open all the jars and reheat the contents in a pot, like you would normally before canning . Clean your jars and add in your citric acid and reprocess the whole batch for the time your recipe says . Make sure to use new lids . If this isn’t possible I would toss them as they are no longer safe to consume.
