Fish and Broccoli Tower Of Doom – a One Pot Rice Cooker Dinner

    An efficient rice cooker one pot meal! Stack plates of fish and vegetables in a rice cooker to steam simultaneously as the rice cooks. Prep as you go, and everything gets done at the same time.

    **Ingredients:**

    * Rice: cook, at most, a sixth of the cooker’s max capacity. You need room to stack the plates of protein and veg.
    * Fish: about the same volume as rice. Cut into very small pieces, to make sure it cooks in the steam. I happened to have Panagsius (the absolute cheapest fish I can get around here; best way I can describe it is catfish but mushy), but any firm fleshed fish like catfish or grouper would also work. I seasoned it with salt and white pepper as well as some corn starch, and topped it with XO sauce for some extra savoury flavour. It would taste even better if marinated overnight, but I am a busy person with priorities that lie outside of the kitchen..
    * Vegetables: Also approximately the same volume as the rice. I used broccoli, cut into florets and sprinkled with salt. Other vegetables like green beans, asparagus or cauliflower would also work.

    **Instructions:**

    1. Begin by making the rice. Put rice and water into the rice cooker and start it.
    2. Cut and season the fish. Arrange on a heat-resistant plate and top.
    3. Once the water in the rice cooker is boiling, place the dish with the fish into the rice cooker.
    4. Cut, season and arrange broccoli onto another heat-resistant plate.
    5. With a few minutes left on the rice cooker’s timer, place the broccoli into the rice cooker as well.
    6. Tower of Doom is complete! Once rice is done, take each layer out and serve.
