I have wanted this recipe for years! I started going to The Hellenic as a teenager with my grandpa but I now live 650 miles away so don’t get back very often. I have never found Skordalia that compares to yours…finally I can bring the taste of Greece to North Carolina….Thank you!

We have allergies to gluten grains, corn, dairy & eggs so we can't use most gluten free breads & even if we could, with a family of 6 the cost would be hard on the budget. Would love to be able to make it though so would you please make a video on the potato version. Thanks.

Most of his career he was a research technician, 2/3 of that time was as in chemical research.
As a child, and his first marriage, he was barred from the kitchen. After his divorce he channeled his time in chemical research to gain confidence to cook. A kitchen is a laboratory, after all.
His cooking was a passion. A matter of pride.
I readily admit I learned as a matter of necessity, (in some ways) I am a product of my generation after all.
The difference showed.
Didn't bother me at all to admit that. Not a bit. I really miss his cooking!
(A side to the haters: 1- people go into these fields to change things from the inside. Blame the business department of these companies. I was a tech, too. I can confirm this! 2- if you wanted an education in shopping for groceries, he was prime. He read labels. The reactions were hilarious sometimes. He also liked ingredients to minimum.)

Skordalia without real garlic paste? No way! Try it with garlic paste instead. The traditional recipe expects a lot of garlic which means that originally the sauce is spicy. Also, it needs some lemon juice which is absolutely needed to balance garlic, salt and olive oil. Olive oil should be an extra virgin one. If you can find a tangy, green coloured extra virgin olive oil (not refined but with a cloudy consistency) you would make the authentic sauce which is heaven! So, to sum up: Garlic paste, Green coloured tangy extra virgin olive oil (not refined but cold-pressed instead), lemon. The sunflower seeds are not in the original recipe. Try these secrets and you would get an amazing sauce.
Traditionaly we serve skrordalia with fried cod and beets, not kalamari!

wow, that's an interesting dynamic you have with your wife. I also have an interesting dynamic. I do most of the cooking to make up for the rest of the shit I don't do around the house lol. I'm not much good at doing stuff around the house but turns out I'm a pretty darn good cook. I even did some schooling and part of an apprenticeship

My mother used to make it with walnuts. Using bread is probably a Southern Greece thing. It goes fantastically well with Bakaliaro or fried courgettes in batter!

I'm not generally one to make suggestions about other people's work, but there is one I'd like to make and that is if you must have background music could you please lower the volume?
