Question: Anyone know a simple snap pea recipe? (Besides just boiling with salt)

    First: snap peas are different than field peas. You have field peas with snaps.

    – 1/4 lb diced fat back.
    – 1/2 c diced onion
    – 1 cup diced carrot
    – 4 c field peas with snaps
    – 1 bay leaf
    – 2 diced medium tomatoes
    – 1/2 tsp sage
    – 1/2 bunch finely diced flat leaf parsley
    – 6 c broth (chicken, pork, or vegetable)
    – 1 tsp pepper
    – salt to taste

    In large pot start rendering fat back until meat part is partially cooked. Add onions. Cook until tender, add tomatoes. Cook for about 15 minutes. Add the rest of the ingredients, and cook until peas and carrots. are tender.
