Chicken Fricassée is a traditional French chicken stew made with browned chicken pieces braised in a creamy white mushroom sauce. A rustic family style meal that’s easy enough for midweek, it’s almost like the white sauce version of Coq au Vin – except it’s so much faster to make!

  1. I made it without the white wine and added a little white vinegar….but turned out to be super tasty… thank you for the recipe

  2. Two years ago I improvised this exact recipe from what I had laying about in the kitchen. Today I learned that I unwittingly invented the poulet fricassée.

Somebody better mail me some royalty cheques for the last two hundred years or so.

  3. don't switch the wine. that is the ingredient that makes this recipe amazing

  4. Question @RecipeTinEats; Is it OK to just add a bit of Olive Oil mixed with the butter at the start to avoid the butter burning too much?
