This Orzo dish with lemon, the last of the courgettes, a bag of frozen peas & prawns is surprisingly simple to pull together when you need an easy lunch or dinner. It’s also a dish I like to feed our boys when I’m using up the last veggies in the fridge!

Serves: 4

Ingredients (US & METRIC):

250g/ 2 cups orzo pasta
4 tbsp olive oil
2 tbsp butter
200g/ ½ pound courgettes/zucchini, diced
300g/ 10 oz raw prawns
150g/ 1 ¼ cup frozen peas
Finely grated zest & juice of 1 lemon
100ml/ ½ cup double cream
50g/ ½ cup grated parmesan
Sea salt & freshly ground pepper

  2. This is a nice a simple dish. I'm slightly annoyed you cut a second whole lemon when you had a half lemon ready.

  3. I love these type of recipes especially since here in the U.S.A its the start of fall.
    I like how you can put in almost any protein and vegetables…and the tip of the spinach is great.
    Yes with the freezer peas!!!
    This comes together fast and looks elegant…..And the zest is perfect, it's "electric flavor"… love that description…and not sure why someone would be annoyed about half a lemon….I am sure you can use that other half of lemon when you reheat the left overs the next day-

  5. Wow! This looks fantastic! My family would definitely love this, but also lends itself to eating solo, in a large bowl watching a favorite movie! I think the parm is a great addition in this type of pasta dish, which is similar to risotto. I love dishes where you can prep and do clean up ahead of time (clean the shrimp, chop the veg, juice and zest the lemon etc), then put the recipe together easily as soon as the Orzo is cooked! Another winner!

  10. I was amazed by the lemon – first you slice a lemon in half and use one half for the shrimps, and later you cut another lemon in half and again use just one half! 😉😇
