✅Ingredients
• 1 pound linguine pasta
• 1.5 pounds shrimp, shelled and deveined
• 3 teaspoons Cajun seasoning, divided
• 6 tablespoons butter, divided
• 3 bell peppers, various colors, sliced
• 1 bunch green onions, chopped
• 8 ounces mushrooms, sliced
• 2 cups heavy cream
✅Instructions
1️⃣ Cook pasta according to package directions.
2️⃣ Toss the shrimp with 1 teaspoon of Cajun seasoning. Heat a large skillet over medium-high heat. Add in 3 tablespoons of butter. Cook the shrimp until no longer gray and they are pink in color. About 10-12 minutes. Remove shrimp and set aside.
3️⃣ In the same skillet as you cooked the shrimp, without cleaning, melt the remaining 3 tablespoons of butter. Add in bell peppers, green onions, and mushrooms. Sauté until veggies are tender. Sprinkle remaining 2 teaspoons of Cajun seasoning over veggies and cook 1 minute.
4️⃣ Pour in heavy cream and bring to a simmer. Simmer until sauce thickens.
5️⃣ Stir in cooked pasta and toss until coated and veggies are evenly distributed. Top with shrimp and squeeze of a fresh lemon and serve.
