Lebanese runner beans & tomatoes in olive oil (Loubeit bi Zeit)

It’s the season of fresh runner beans & best ones to have are stringless runner beans. Recently purchased Lebanese stringless runner beans from Middle East Food Market in Ealing Common, London, UK & they were lush! You can also find them at all great UK supermarkets: Waitrose & Partners

Great eaten with bread, rice or as a side dish.

1 kg stringless fresh runner beans cut into 5cm chunks (regular fresh runner beans are ok or frozen)
1 whole bulb of garlic, finely sliced cloves
2 large onions finely chopped
5 salad tomatoes finely chopped
1 tsp sea salt or to taste
1 tsp ground allspice
70g tomato purée diluted in 200ml boiling water (may need another 250ml or 1 cup water during cooking)
3 tbsp good quality olive oil

* In a large cooking pot, fry the onions & garlic until golden in 3 tbsp oil, perhaps after 5 mins on medium heat.
* Next add green beans & fry for 5 mins, keep stirring check beans are wilting.
* Add salt to taste & cook for another 5 mins.
* Next add chopped tomatoes & cook another 5 mins.
* Add 1 tsp ground allspice & cook another 5 mins.
* You should start to see water coming out of the vegetables, allow water to evaporate & cook out for another 5 mins.
* Next add tomato purée & stir. If you want a thick tomato sauce & happy with water left in pot, then don’t add anymore water. If you want a more thinner sauce, you can add more water, perhaps up to 1 cup
* Cook for another 5 mins & when all beans have wilted (cooked through & al-denté).
* When ready, serve immediately with bread, rice or as a side dish.
