LEBANESE FATTOUSH SALAD RECIPE by EVERYTHING BUT PASTA (RECIPE BELOW!):
I N G R E D I E N T S :
FOR THE SALAD:
2 romaine hearts, coarsely chopped
1 red or yellow bell pepper, cubed
1 Lebanese cucumbers, large dices
½ cup cherry tomatoes, halved
4-5 radishes, thinly sliced
½ red onion, finely sliced
½ cup chopped mint
½ bunch chopped parsley
1 tsp sumac (optional)
DRESSING:
2 cloves garlic
¼ cup extra virgin olive oil
¼ cup freshly squeezed lemon/lime juice
Sea salt and freshly ground pepper to taste
PITA CHIPS:
2 medium pita breads, ¼ cup olive oil, ½ tsp garlic paste, salt and pepper to taste
D I R E C T I O N S :
Separate the pita bread and brush with olive oil mixture. Cut into bite size pieces and lay on the tray. Bake in 300 degrees F oven for 5 mins per side, until golden brown.
Place the romaine, pepper, cucumber, tomatoes, red onions, mint and parsley in a large bowl
In a blender bowl, add garlic, lemon juice, olive oil, salt and pepper. Blend all ingredients
Add the pita chips and Sumac to the salad. Pour the dressing over the salad. Toss lightly to mix.
