The beauty of a pineapple upside-down cake is how its base becomes a delicious caramelized topping once it’s done and flipped. In this easy recipe, that base is made with melted butter, brown sugar, and cherry-studded pineapple rings – all arranged under a layer of soft cake (made with boxed cake mix!) in a cast iron skillet. Unlike most other cakes, this one is nearly done once it’s out of the oven since you can skip the frosting and decorating steps. All you need is a good flip (don’t worry – Nicole shows you how) and a bit of whipped cream to top each slice.

  1. you asked so i want to learn how to make a holiday fruit cake. . it cant be more vintage than that. by the holidays i could have it down pat.

  2. One of my favorite desserts and you flipped it, girl! I love to indulge vicariously through you. Keep the delicious videos coming our way!

  3. My Gram made these all the time… Haven’t had one since she passed. I did notice that you used a white cake mix.. Hers was a yellow cake mix… I guess it doesn’t matter really but everything looked great but the cake being really white tripped me out a bit.. ❤

  4. That looks wonderful! For your next vintage dessert how about Boston Cream Pie? I love the taste but don’t have a clue how to make it.

  5. Vintage recipe request: Quick bread using None Such Mincemeat, classic original in the small box. I made one years ago and my friends went crazy over it but I don't recall where I found the recipe. I'd love for you to do your magic with this one.

  6. Do you think the ingredients that you added to the box cake mix would work with a gluten-free box cake mix? Would it come out with the same consistency and texture? Or do you think it’ll just be a big old mess?

  7. You must have read my mind… I've been thinking about making one of these in my electric skillet. I did it once or twice years ago but now I'm not sure what recipe I used. Pineapple Upside Down Cake IS definitely classic — and delicious! Thanks for the video!

  8. Boxed cake mixes are disgusting. You're already adding most of the ingredients when baking from scratch, why use some chemical laden substitute?

  9. Have ya’ll ever made a squash pandowdy?
A great dessert made with squash!
My Mema used to make it.
Along the lines of a sweet potato pudding.
