Ok I’ve never run across this before, and I have no idea what’s going on. Did not have this problem last year. 7/7 jars in my first batch failed, and 3/7 in the second batch.

Followed the NCHFP recipe for apple pie filling. Peel, slice, blanch. Juice, water, sugar, spices, clear jel. Lemon juice once it thickens, boil 1 minute, fold in apples. 35 minutes BWB for my altitude.

Filled to 1” head space first batch, 7/7 failures. Filled to 1.5” head space second batch (see picture) and still had failures! What gives?!

    Are the sealing part of the lids ball like the jars or or off-brand? Could it be the seals on the lid instead of the recipe?

    The step where you cook the apple slices is cooking… not blanching. Apples have a TON of air trapped in the flesh and the cooking step is to collapse that. Yes… it makes the slices messier… but the jars seal.
