Long Island Smashburger
Some chefs say the best thing a lobster can be is a smashburger — I don’t know whether that’s true, but here goes:
For 3 fully loaded Burgers you’ll need: 250-500 grams ground beef (single or double), 1 cooked lobster (8-900 grams), ketchup, mustard, onion, tomato, lettuce, for your mayonnaise 1-2 eggs, mustard, salt, white pepper, lemon, sunflower oil, burger buns
1. separate lobster meat from shell and keep cool
2. make mayonnaise combining egg, mustard, salt, pepper, lemon and oil
3. whisk until smooth, takes less than 10 seconds
4. salt your meat & add some olive oil, make uniform size balls
5. get your pan very hot (!), smashburgers depend on it for color
6. place meat in pan with some oil and press down
7. smashburger are thin burgers !
8. turn after just over a minute
9. briefly brown your bread and sweat your onions
10. combine lobster and mayonnaise
11. final assembly: bread, mustard, ketchup, mayonnaise, beef, onion, tomato, lettuce, lobster salad, bread
12. enjoy right away
