I’ve checked the tested-safe websites for low sugar or no sugar recipes, and I’m not finding much. I’ve gotten the Sure-Jell pectin for LS/NS, but I’m still having trouble finding recipes. I’m new to canning and scared.

Generally, recipes provided by established manufacturers are reputable and safe. Especially for low-sugar pectin, the formulation differs among manufacturers, so you basically have to follow their instructions if you want your product to set.
Sure-Jell is fine. Go to their website, pick a recipe, and enjoy.

Just be careful. Many recipes have a low sugar version, but some will be unsafe if made this way. Happy canning!

Normally, there is a sheet of instructions in each box listing the various fruits and how to make.

Just a heads up on the low sugar pectin. Low sugar products discolor quicker than full sugar. They also don’t last as long on the Shelf so plan for 6 to 8 months instead of 12 to 18. You can also check out Pomona pectin which will allow you to do zero sugar or use alternative sweeteners.
