Ingredients –

1 1/2 Tbsp (30ml) – Olive Oil
1.5kg (3.3lbs) – Beef Chuck, Large Diced
2 – Brown (Yellow) Onions, Large Diced
6 – Shallots, Halved & Peeled (Substitute With Onion)
4 – Garlic Cloves, Roughly Chopped
2 tsp (5g) – Ground Cumin
130g (4.5oz) – Concentrated Tomato Paste
160ml (160g) – Red Wine (See Alcohol Notes Below)
60ml (1/4 Cup) – Red Wine Vinegar
550ml (550g) – Chicken or Beef Stock or Water
2 – Cinnamon Sticks
10 – Whole Cloves
4 – Dried Bay Leaves
7g (0.25oz) – Fresh Oregano
90g (3.1oz) – Dried Currants (Optional)
Seasoning To Taste

Recipe Notes –

If you can’t consume alcohol, substitute the red wine for beef or chicken stock.

If you wish to not use fresh oregano, dried can be used instead. Use 1 1/2 tsp (1.5g).

Dried Currants are optional.

Shallots can be substituted with regular brown (yellow) onions. Use 2 extra onions.

  1. nice recipe. I'm not used to cooking so i did burn a bit of the beef and onions while letting it heat, shouldve put it on a lower flame lol. But yes despite that, lovely flavour. It was still a very tasty dish despite some of the burns i made. I was blown away by how nice the beef was.

  3. Very intrigued by this recipe and would love to try it. Unfortunately, black currants aren't available here in the states though black currant jam can be ordered online. I wonder if a dollop of that would work.

  4. Might be buying currants for the first time just to try them in this. According to Google they're a different flavor than regular raisins, which is cool, because I like broadening my palate.

  5. How do you manage to brown the meat without splattering oil all over the stove?? I love watching professional chefs, but it never works out when I try to replicate the recipes and techniques!!!

  11. I made this tonight. I did indeed have everything in my pantry except for the currants which were easily found at my local grocery store. Turned out wonderful! I also served it with mash potatoes.
