Greek pasta salad with creamy dressing – Mediterranean pasta salad

Ingredients:

Dressing:
100 ml (1/2 cup) extra virgin olive oil
20 ml (1 tbsp) vinegar (i used white wine vinegar)
30 ml (2 tbsp) lemon juice
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
2 tbsp mustard (dijon or hot)
200 g (7 oz) Greek yogurt

Pasta:
350 g (12.5 oz) farfalle pasta
about 250-300 g (9.5 oz) cucumber, sliced into half circles
230 g (8 oz) cherry tomato, sliced in half
1 onion, thinly sliced
about 150 g (5.5 oz) romaine lettuce + rucola
salt to taste
70 g (2.5 oz) kalamata olives, pitted
180 g (6.5 oz) feta cheese, crumbled

For the dressing mix together olive oil, vinegar, lemon juice, salt, pepper, garlic powder, dried basil and dried oregano. Add mustard and stir well. Add Greek yogurt and stir WELL to combine. Refrigerate.
Cook pasta according to the instructions on the package. Once it’s cooked, remove it from the heat and strain it.
In a big bowl stir everything together – pasta, salad, cherry tomato, cucumber and onion, salt to taste. Add olives and crumbled feta. Mix well.
Add about 2/3 of the dressing at first. Toss well to coat. If you want your pasta salad to be more creamy, add more dressing, depending on your taste.
