Cayenne and maroweewee (little red orbs, not sure of actual name) pepper are the only two I’m sure of.

Pickle, Dry and Ferment are options. Make a whole bunch of sauce from fresh peppers as well.

There are some good videos on YouTube about making diy pepper spray. (It illegal in my country)

Eat them? I buy a pound of the Thai chili peppers and stash it in the fridge. I use about 3 in everything like ramen, dipping sauce, pizza, soup, you name it… Restock every 2 weeks or so. It freeze well so if we have a bumper crop, there’s a big ziplock bag in the freezer too for the off season to supplement the store bought one.
