I have been hot pepper and spicy food fan for a while now and have 2 of each White Naga, Fatali and Habanero (that’s what I am told they are anyway) pepper plants for the last couple of months. What can I make with these peppers,?I want to use all of it and I think should try to make a sauce or pickle or both?! Any suggestions and recipes are welcome. This is my first try and they are very tasty, don’t want to waste any peppers.

Or some nice pepper poppers filled with cream cheese and lil smokie sasuge. Then wrap with bacon
That’s what they look like. Some are unripe obviously. Habanero is probably the least spicy and they are not not hot. I would ferment them and make a green hot sauce. Or make a fresh hot sauce without ferment. Making a salsa with all these is going to be hot as shit. Poppers going to be hot too unless your tolerance is pretty high.
Dehydrate, grind to fine powder, use as seasoning when cooking
Throw peppers in blender and purée, then add vinegar and seasonings. Then pour into bottle and . Last about a month wo pasteurizing. To thicken add xanthin gum. Too thick add more vinegar.
I’d make a good spicy salsa then freeze it in small portions you can take out as needed
Fermented hot sauce.
Cut the peppers in half, remove seeds and stems to adjust heat level. If you want cut up 8-10 cloves of garlic and slice and onion. Later all these in a wide mouth mason jar. Dump in a tablespoon of kosher salt (no iodine salt) fill bottle with filtered water, give it a shake. You need to put a weight on top of it to hold the ingredients under the water. You can get a fermentation weight at like ace hardware or Amazon. Cover the top with cheesecloth and tie it on with a rubber band. Stick it in a cool dark place for 1-2 weeks.
At the end of two weeks, strain the mixture and put the solids in a blender. Add the liquid and blend, adjusting how much liquid to make it as thick or runny as you like. Add a tablespoon of vinegar. You can also add lime juice, seasoning, whatever. It should last a couple months in the fridge.
