Ingredients
1 Tbsp Olive oil
2 to 3 zucchinis
2 to 3 cups of cooked rice
1 bag of frozen corn
3 ripe tomatoes
1/4 onion
2 garlic cloves
2 to 3 tbsp chicken bouillon
1 Tbsp Mexican oregano
2 cups Mexican cheese blend
1/2 cup Panko crumbs + 3 Tbsp Butter

If you cut your zucchini’s into larger bites, cover completely with foil and remove last 5 mins

Could you use rice cauliflower instead of rice?
My mom use to put zucchini over buttered rice and then grated cheese and melt it. She did this over 50 yrs ago but you've taken it to the next level. Can't wait to try it!

Made this tonight but changed a few things: I added pinto and black beans for protein, roasted red peppers and finally the zucchini (which gutted in the middle). I added wild cumin seeds, red chili flakes and a bay leaf to the sauce (used chicken Pho stock to keep it vegetarian). I had very little expectations for this easy dish but it turned out much better than I thought. Thanks for the idea!
Mine turned out really dry, next time I'm going to use more tomatoes or sour cream to give it moisture.
I have lots of zucchini in my garden and needed something to bring to a potluck party tonight, so this is in the oven. I hope mine comes out as nicely as hers did!

I’ve made a similar casserole for years. I add a pound of browned and seasoned ground beef. I layer it with the zucchini. It’s a hit! Almost like an upside down pizza.
