I can assure you you will never find meatballs in any first course in italy. We consider meatballs a second course. I am from the central north part of italy and i never even hear of this plate, not even in ours humongous 5 courses wedding meal (entree, first courses, meat courses, sorbet break, fish courses and dessert) . Might be an italoamerican thing tho, like meatballs spaghetti and meatballs pizza, they love mix stuff up.

My dad is probably the only Italian that doesn't like onions… Can I make this without it?
best to put them in the fridge, not freezer, and cook them the following day to keep the freshness.

Maybe try substituting onions with leeks?

I made a vegetarian version of this with your "earth-meatballs" and vegetable broth. It was delicious. 🙂

I've never seen this in Italy, but my mum used to make mixed broth with chicken and beef. Why couldn't you have done that, Chef?

You forgot the carrots celery and onion. And you should try Browning the meatballs first it gives it an extra layer of flavor.

I always use escarole and I usually put pickled cherry peppers in my bowl, nice sweet and sour component.
Did you intend to show how to make the chicken broth at the same time as the beef broth?
