  4. This will be a go-to recipe for years! Appetizer/mezze or a main dish.

    Iโ€™ve already made this twice and the second time was a little better because I adjusted the recipe to work with my indoor grill pan and the shrimp cooked quicker with more defined charring marks (dry spiced shrimp with oil brushed on the grill pan right before cooking). I made this for a main course and had butter lettuce and warm basmati rice as a base. I added the Parmesan atop the hot shrimp in the mixing bowl with the parsley pesto mixture so it would adhere more directly to the shrimp before I tossed everything. Fantastic recipe!
