Guga!! It's been a while since youve done ribs! Try Smoking the rib, and finishing it in a nice charcoal fire! Yes, FIRE! After I put BBQ on the ribs towards the end, I caramelized the sauce in the flames of a charcoal grill by dousing it with olive oil when the ribs are over it! MONEY. You're welcome 😉

I check out your cheesesteak contest you're right about one thing you have to find your own cheesecake place to eat but Philadelphia cheesecake the main agreement of the Tuesday is amarosa bread Number 2 cheese American yellow cheese So when you ever get a chance you can order Armarosa bread from Philadelphia They ship all over the world now that tell you how good I'm a roast of bread is I'm out of Philadelphia

I drove through Pennsylvania about 3 months ago. All the food I had was absolutely trash. 😢 then I got to Denver for a Broncos game and ordered a Philly cheesesteak. It didn’t even have cheese…. Two opposite ends of the country, two terrible Philly cheesesteaks.

It's not the quality of meat that is the issue. Cheese steaks cook the meat to death anyway. It's about the bread, allowing the onion and pepper juice to season the steak (no extra seasoning outside of salt and pepper), and….did I mention the bread? Can't use a French roll. Pats and Geno's are tourist traps. They are fine. But the real goats are Dalisandros and Mama's.
But French rolls? C'mon dude. GTFO here.

I’ve had a lot of Phillies all over the country.
A perfect Philly for me has sautéed onion and fresh bell peppers, mushrooms, & cheese. AND THAT IS IT!!!!
NO MAYO, NO KETCHUP, NO TOMATO and absolutely NO SWEET PEPPERS. I don’t think these things belong on a philly but I have had them come with these things. I will eat it with these things, don’t get me wrong but the one thing that ruins it is the sweet peppers. The sweetness instantly ruins it for me. It’s like putting miracle whip on a sandwich and calling it mayonnaise. You have to be extra extra careful of that in the south. I hate miracle whip!!!!

Guga, I think the reason they don't season the steak until after is because the meat is sliced so thin, that if you season it beforehand, the salt will draw out the moisture and dry out the meat. At least that's what I was told from a Philly native.
