Like many foods, it’s unclear where exactly romesco was first created. But the version that most resembles those seen today is believed to have originated in Spain in the 16th century.

  1. Please don’t let the angry “this isn’t vegan” comments on your accounts deter you from keeping this channel and your blog. I love your food, and it can be used as a baseline and then substitute ingredients to make it fit a vegan lifestyle… Really not that difficult not to be mean to a stranger on the internet. 🤷‍♀️ Thank you for your recipes and keep them coming!

  2. Romesco sauce is made from:

    Roasted tomato,
    Roasted garlic,
    Hazelnut (maybe some almond),
Nyora (a kind of pepper that is dryed and then rehydrated to obtain a kind of "wet paprika")
    Olive oil
    and salt.

Your version seems pretty different but looks good.

  3. I tried this today and OMG this was so easy and simple. I didn't cover my peppers with foil. They were still easy to peel and I didn't have peeled and slivered almonds. I just microwaved whole almonds for 2 mins and they worked flawlessly. I had this over Zoodles and added some olives over it. Heavenly!!!
