Ingredients
2 pounds baby potatoes
salt, to taste
The Dressing:
1/4 cup fresh lemon juice
4 tablespoons butter, melted
2 tablespoons olive oil
1-2 teaspoons dried crushed oregano
4 cloves garlic, grated
1/4 teaspoon ground black pepper
Instructions
Place the potatoes in a saucepan and cover them with cold water. Add a teaspoon of salt and bring to a boil. Reduce the heat to medium and cook until the potatoes are fork tender. About 20-25 minutes.
Preheat the oven to 500 °F, 250 °C.
Drain the potatoes and place them on a baking tray.
Using the bottom of a mug or a bowl, press the potatoes down to “smash” them. They should become about a half inch in thickness.
Combine the dressing ingredients and whisk them together.
Pour about a tablespoon of the dressing over each potato and season them generously with salt.
Roast them in the preheated oven on the middle rack for 15 minutes.
Turn the broiler on and leave the potatoes on the middle rack. Broil them for about 5 minutes or until crisp on top and golden.
Serve with tzatziki or lemon wedges.
Enjoy and Kali Orexi!
Notes
During the final 5 minutes of roasting/broiling add a cup of crumbled feta cheese on tip of the potatoes. Garnish with chopped parsley and serve.

Hi Dimitra!! I ABSOLUTELY LOVE ALL YOUR RECIPES!! Thank you!! 🙏❤️I have a question… Will they still be crispy if I don’t smash them?
Yummmmm new subscriber love these potatoes Thanks A Bunch there Delicious 😋 ❤️❤️❤️
Thank you for recipes and the great Music 👍❤️
Love pots and also love lemon meringue pie. Is there a way of combining the two?
These were so bomb Dimitra, I have made them twice this past week. Family loves them. I added a little chicken bouillon powder to the marinade with some onion powder and garlic powder. I also cooked the potatoes in my IP for 12 mins. Those were my only changes and these will be in my weekly rotation for sides.
This looks delicious!!!
Love your vegetarian/vegan recipes. YUM❣️
Thank you very much,SUPER…!!!
Loved it!
This video brought back memories I love this meal
Celcius please
It looks delicious…. I need to marry a woman who knows how to cook just like you
Great recipe. But RIP to those baking sheets. And using butter just burned the herbs, olive oil would have prevented that… but not broiling it for five minutes would have also stopped from burning parts of the top… and I shutter to think how burned some of the edges and bottoms are on those potatoes!!!
How many lemons do you use?
EVERY ONE LOVES DIMITRI'S FOOD DELICIOUS, AND WE LOVES YOUR YOU TUBE 👍👍👍👍👍👍👍 THANK YOU
I made this but with olive oil. Oh its so good.
Made these today for my mom's birthday. She loved them!
Looks good
Yummy 😋
I use the same ingredients for roast chicken pieces over potato. Way way too much salt. Why not let people salt their own meal?
