Tajine or Tagine is a Berber dish, named after the earthenware pot in which it is cooked. It is also called maraq or marqa. This dish has literally become one of our favourite.

We tried a Moroccan food for first time last year and we are so in love with tagine. What makes tagine special is the pottery itself. While the food is being cooked, the moisture rises into the cone, condenses and then falls back down into the dish. It allows to naturally and continuously baste the dish and to keep the ingredients moist and the meat buttery.

  1. Why would a tagine be any better than cooking in a pot with the lid slightly off?
    I want to get one but need to make sense of it first.
