Old Fashioned Creamy Cucumber Tomato Salad
This is one of my favorite summer salads. It is packed with crisp cucumbers, juicy ripe tomatoes, and fresh herbs and all topped off with a delicious creamy sour cream dressing for one amazing summer side dish! It is a salad that you can almost always find in my refrigerator once the garden has started producing. Give it a try and let me know what y’all think. Ingredients:
2 large cucumbers
1 large tomato
1/2 medium sweet onion
1/2 cup sour cream
4 tablespoons Dill Weed
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic powder
2 tablespoons vinegar
Peel and dice the cucumber. Slice in half and deseed with a spoon.
After seeding each half, dice into 1/2 inch or so pieces and place in a medium bowl.
Dice your tomato in about the same size pieces and add to the cucumber.
Now do the same with the onion, but dice in pieces about half the size of the tomato and cucumber.
Add the diced onion to bowl and set aside.
In a small bowl mix remaining ingredients. Taste for salt, add if needed.
Pour mixture over the cucumber/tomato/onion mixture and mix well.
Refrigerate for at least 2 hours.
If serving at a picnic or outside event, keep chilled due to the sour cream.

I love this type of salad, just wish my hubby did..so when I make it I usually only make a small bowl….glad you’re on your way to feeling better…I had it last year, lost my smell & taste for about 3 weeks…although I could taste salt…anything salty…I drank a lot of Adult Pediaylte & salt was all I tasted..I didn’t have the nasal stuff & cough (but hubby did) it attacked my gastrointestinal system…I sure hope we don’t get it again….so sorry to hear about your mom’s garden stuff getting stolen, very sad & I know she was hear broken…

First time visiting your channel. [Patara sent me 😁] Really enjoyed this video. Reminded me of cooking shows that used to be shown on PBS and early on in the life of the Food Network. I enjoyed the low key nature of your video where you just shared some stories about what's been going on with you while you cooked and shared a recipe. It was kind of like hanging out with a friend in their kitchen and catching up while they cook. (Just couldn't offer to do anything to help out this way.) 😊
Ironically, I was just talking with my other half, yesterday, about how the Food Network has changed over the years, and how I missed the way the older shows were presented. So watching your video was a refreshing experience!
Sorry to hear about your mother's garden being raided. Motion detection lights and cameras may become necessary to prevent further incidents. One concern I would have is that she may have people try to break in to get things when there is no longer a garden with easy access if they are hungry. I'm not trying to be a fear monger either. I've had the same concern about some of my own elderly relatives that I do not live near enough to help.
Glad to hear you are recovering from your recent bout of illness. Did you ever experience a burnt smell inside your nose when you'd breathe – kind of like a stale ashtray smell, or a stale smoking lounge smell? I haven't had the illness you described, but after I got a dose of the preventative medicine, I had taste distortions and I've had that kind of a smell return off and on since I got that one dose. The taste distortions went away after a couple of weeks and didn't return, but I still randomly experience times where I smell that stale smoky smell. Just a curiosity on my part…

YUMMMM – that cucumber salad looks wonderful! Please educate us on your SALT CONTAINER and those KNIVES, the large one. Your Mom used the same knife and it cut through like butter. GOD BLESS!!!! Sorry to hear about two times with that virus, I'm more sorry to hear you elected to take the vaccine, which based on all the news is directly the reason you experienced your second bout with it. I have natural 2021 immunity and feel GREAT!
That salad looks delicious! My mom makes one that’s cucumbers, tomatoes, dill, salt, pepper and mayo! It’s simple but delicious! Yours is like taking mom’s up a notch! Gonna have to make this!

Sorry to say but the people that took her vegetables probably needed it more than she did times are hard for so many people and kids are going to bed hungry. Tell her not to be so disheartened and angry about it. But if she can to be glad that she was able to help someone in need.
