Did a couple small batches of jam that both came out very tasty, so I thought I’d share the recipes (both from Pomona Pectin). The plum jam is pleasantly tart with a subtle hint of Rosemary. The flecks of vanilla in the pale pear jam came out pretty, and adding a little maple syrup set it off.
I halve the pectin listed in Pomona’s recipes for a softer set, as I’ve found their pectin sets hard for me. I also tend to start with the minimum amount of sweetener they recommend and increase to taste.
These are gorgeous. I made a peach bourbon vanilla jam that was a huge hit a few years ago and I’ve been trying to find something in that same vein ever since! I’ve got to try your strawberry plum rosemary recipe.
