Pressure canning some beef stock in this 30’s/40’s burpee pressure canner. Is 15 minutes at 15lbs enough for 1L jars?

Have you had the gauge tested recently?

What’s your altitude?

Aside from the fact you should get it tested…I think beef is like 90 mins at 10-11lbs
Look at the first chart, and use 0-2,000 ft as your altitude. It shows for quarts at that altitude you process 25 minutes with 11 pounds of pressure. https://nchfp.uga.edu/how/can_05/stock_broth.html

Both Ball and the National center say 25min for quarts higher pressure means higher heat, the concern is heat penetration which takes time.
