Turkish red lentil soup is ready in 30 minutes. This gluten free and vegan soup is so simple to make at home.

Ingredients:
2-3 tablespoons olive oil
1 large onion (or leek), chopped
2 carrots, chopped
1 medium potato, chopped
2 tablespoons tomato paste
1 ½ cups (270 g) red lentils
1 tablespoon vegetable stock
1 tablespoon sugar
½ teaspoon black pepper
1 teaspoon cumin
1 teaspoon salt
6 cups (1.5 litre) water

Saute onion until golden
Cook for 2-3 minutes
Cook for a minute
Cook covered on medium heat for 30 minutes (until the lentils are completely cooked)
Blend the soup in the blender until it’s creamy and smooth
Serve with paprika oil, parsley, croutons and lemon juce
