My pickled jalapeños are: 1 part rice vinegar, 1 part apple juice, 1 part water, 1 sliced clove garlic. I also add pickling cucumbers for the obvious reason.

Just FYI, it is no longer recommended to flip the jars while waiting for them to seal. It can cause failure and renders them non-shelf stable.
If this were /r/canning, this post would get flagged for unsafe canning methods.

Failures can be rare, but it’s best to avoid bad practices in the off-chance failure should occur.
