Skorthalia/skordalia is a very piquant dip/sauce redolent of fresh raw garlic, vinegar or lemon juice and extra virgin olive oil. It is a perfect accompaniment to grilled or fried fish but it is not limited to this. If you love garlic with a bit of a kick, this is for you.

Do you know how long this would keep in the refrigerator? Or can it go in the freezer to last longer?
