Couscous and Chickpea Salad Recipe

Ingredients: 4 cups of cooked couscous. 2 cups of cooked or canned chickpeas, 1 red onion. 3 sweet peppers or 2 bell peppers, 1 seeded green jalapeno pepper (optional). 4 scallions. 1 cup of chopped parsley and cilantro combined. 4 cherry tomatoes, halved. Olives. Salt and pepper to taste. Juice of 1/2 lemon lime. 1 tablespoon of vinegar. 2 tablespoons of Mamie Renée’s green seasoning. 1 tablespoon of seasoning mix of your choice.
In a large bowl, add: sliced onion, sliced sweet/bell peppers, chopped parsley, salt and black pepper, seasoning mix, vinegar, olive oil, Mamie Renée’s green seasoning, lime juice. Mix well. Add the cooked couscous. Mix. Add the cooked chickpeas. Mix. Garnish with the halved cherry tomatoes, olives, and some onion slices.
