We all know salads are good for us, and they can also be pretty boring. So I created this roasted cauliflower and chickpea salad with homemade tahini dressing to spice up your most-likely boring salad routine!

This salad takes a little longer to make than the typical salad. However, it’s well worth the extra effort. And to be honest, it still doesn’t take that much time to make. We are talking about 30 minutes from start to finish, and that’s mainly to roast the cauliflower.

Even if you don’t like cauliflower, the tahini dressing is a MUST-TRY! Even my loves it, and she is a picky eater! Try it out for yourself and let me know what you think by leaving a comment below!
