My mother made her meatballs exactly like Eva, but more pecorino than parmigiano (and always cooked her meatballs in the sauce – her family was from Treviso). My father loved them but his mother fried hers (his family was abruzzese). I love your recipes!

To improve the crust on fried meatballs you can roll them in breadcrumbs before frying them.
My friends mom used to put pine nuts in her meatballs. Have you ever heard of that? I mean, they were Amazing ๐ฎโค
I put aged asiago, maple syrup, hoisin sauce, chipotle peppers, mayonnaise in meatball. , Oh that's bait for hunting boar or bear, lol.. I like pecorino in mine, use yesterday's bread find in dumpster for breading, has to be fresh parsley I find on busboys plates, garlic and eggs I find in the farmers market compost bin, do think ground beef and ground veal best for meatball, sometimes steal from the church on Thursdays, then on Fridays I get the tomatoes from same church, and farmers market from others carts. Works out, if hit every church in community for free food, sometimes get packaged Alfredo, or jars of sauce. Got whole Italian meal. If see an old lady with loaf bread.
I really think… adding some spoonfuls of Genovese/Walnut-ricotta pesto to the in bianco metaballs, would be a really good recipe. I have to try that.

Is she truly from Italy? I was born and raised in an Italian family, and I know of not one family member that uses an accent that sounds as though they came from Russia. Is this a put on fake accent or what?

Our meat sauce is called "Gravy". Our regular sauce is just sauce. We use regular sauce, (started with only olive oil, garlic, and onion), when we are going to serve some kind of fish, like spaghetti and shrimp, or Spaghetti and calamari, of spaghetti and Tuna. Yes Tuna!! When I cook my "gravy", I put the meatballs, sausage, and a cheap piece of steak like round steak right in the pot. I know when the gravy is done and ready to serve when the steak is almost completely disintegrated. I also use the same two meats but in different ratios. Also my pork is ground Italian sausage. You can't use 1/2 & 1/2 because the meatballs will come out having a heavy sausage flavor and overwhelm the beef flavor. I think my grandparents came from a different part of Calabria. Although our recipes are pretty similar, there are some unique subtle differences is ratios and processes. We call them family secrets. LOL I always enjoy your videos. You inspire my weekly shopping list.

Eva reminds me so much of my Sicilian grandmother. She and her siblings immigrated to escape the world wars. Miss her so much.
My little sister is her namesake. We carry her family recipes and hope the next generation continues them.
