  7. I call it chocolate pudding cake. I’ve made it for years, but you can’t tell. Because I’m barely 100lbs. So it’s not fattening at all 😜 I also use a good strong coffee to pour over it, and the cake soaks up all the coffee to make extra extra pudding. I will try it your way also.

  8. Chocolate lava cake is not just undercooked chocolate cake. That's not what makes the center molten. You take a FROZEN CYLINDER of ganache and you SET IT in the ramekin so as the OUTSIDE COOKS FULLY THE INSIDE BECOMES MOLTEN. IT'S FUCKING MOLTEN

    and what's particularly wrong with me is that I got addicted to his chocolate puddino, which I make all the time, in all kinds of variations (as the additional flavour to chocolate): coffee, almonds, mint, rum, white chocolate, masala, cardamom… but only for valentines I make it raspberry flavoured, with real fresh raspberries (that's when they're in season here).
    so I'll have to embrace what's wrong with me, and keep this wonderfully simple and scrumptious recipe for my son's birthday.
    so, what say you, chef john? good trade?
