The applesauce recipe seems to align with the [NCFHP instructions](https://nchfp.uga.edu/how/can_02/applesauce.html).
The apple butter recipe doesn’t have canning instructions, but looks fairly similar to the [Ball recipe](https://www.ballmasonjars.com/blog?cid=apple-butter).
Apples are a high acid fruit and are generally safe to can without added lemon juice or other acid, as long as the processing time is appropriate and adjusted for elevation.
