It always tastes waaaay better from restaurants. And I know at least some of them are store bought. The linked one is usually the one I go for, as it comes closest to restaurant-style quality. Anyone have a recipe or alternate brand recommendation?

With something as dead simple as sambal oelek, it being freshly made makes all the difference. Takes almost no time to do if you have a food processor, I’ve never gotten store bought from a restaurant. Though of course it’s possible. I’m also assuming there’s some sort of heating/cooking to ensure sterility in jarred and cooking it *really* mellows the flavor
It’s just Thai chilies, a few ml of rice vinegar and salt run through a food processor, I like adding a little garlic though that’s not traditional from my understanding. Can play with ratios to suit your taste but most recipes are usually around
500g Thai chilies, 30ml rice vinegar, a heavy pinch of salt. You can add garlic or lime if it appeals to you. Run it through a food processor or use a molcajete until a rough paste forms. And that’s it. Put it in a jar and go.
My grandma was Indonesian and I can’t make it like she always did, store bought sucks
