Finally got myself a slow cooker. First dish will be leg of lamb with red wine. Any do’s and dont’s? Generic rules to follow?

I avoid adding water even when a recipe calls for it. The natural juices (and wine) is more than enough. Less liquid means longer cook time. Resist the urge to keep opening the lid. That slows it down. If you use onions, put them in raw.

Follow a recipe if you can? Vegetables on the bottom in a layer to create some tasty juices and to prevent the meat from drying out.

Use lamb shoulder next time. Fattier and more connective tissue. Lends itself better to slow cooking. Leg of lamb is better done at a high heat for shorter time. You might find it dries out a bit, slow cooked.

If you are inclined to add milk or cream to make a delicious gravy, don’t add anything dairy until the end or else it will split and be grainy.

Not sure about your slow cooker, but mine can go on the burner, and I always brown my meat and veg first, then deglaze with some wine/broth and then throw it on the cooker part.
If yours doesn’t do this, brown in a pan, deglaze, and dump in the slow cooker.
