Cig Kofte or Turkish style raw meatless bulgur ball is a popular street food of Turkey. The name “cig kofte” means raw meatballs. In the traditional recipe, it has meat along with cracked bulgur wheat. Meat is cooked by adding many spices and kneading by hand for a long time. But as street food, it is commonly made without meat and so it is vegan.
Ingredients For Cig Kofte
1 cup thin bulgur wheat
1 cup of hot water
1 medium size onion
1 tsp salt
about 1/3 cup walnuts
2 cloves of garlic
1 tbsp isot pepper
1 tsp red pepper flakes
1/2 tsp each cayenne pepper, all-spice, cumin
1/4 tsp cinnamon, sumak, ground black pepper
dash of ground ginger
1 tbsp tomato paste
1/2 tbsp red pepper paste
juice of 1/2 to 1 lemon
1 tbsp or more pomegranate juice
about 4-5 tbsp olive oil

  2. I went to Istanbul from Singapore in end of 2018. I've known Ali Usta from youtube videos before. Alot of foreigners took pictures with him. He's fast pace and hilarious. We found it so amusing how he screams at everyone to move the line. He has no patience to pack your kofte for you, so you have to be ready and hold your bag open. Sometimes he breaks, hands the whole line a piece of lettuce each and put some cig kofte in them. Then with one squeeze of the lemon, he move through the whole line so everyone gets a bit. Then people get to taste at the same time. It's more for the entertainment than the actual kofte. But I still love it. And that's why I'm here for the recipe 😋

I lived in istanbul for 2 years and I always saw people eating cig kofte although it looked gross to me and I didn’t wanna try it , but I loved all types of turkish food except for this one which was too much for me to try until one time I was in ikitelli and I ordered a whole grilled meat meal which was served with 5 pieces of cig kofte as a side dish and I finally put one in my mouth and bang ! I loved it
