We ate these in Portugal this summer, and the taste has stayed in my mind since. It is marinated pork loin in a sauce of white wine, paprika, and vinegar lightly cooked in a stew similar to the marinade and then heaped onto a squishy roll with mustard.
One of the best drunk sammiches I have ever had.
