Hi everyone!! Thanks again for the help when I posted last time. I followed your advice (and the Ball recipe for applesauce) and canned for the first time last night!

I tried to remove all of the air bubbles and left 1/2 inch of headspace as per the recipe, but it looks like I have quite a bit more than that in the jars now. They’re both totally sealed, I heard a very satisfying POP from each of them, but want to be super sure it’s nothing to be concerned about.

  2. After you took them out, was the water in the canner discolored, like it had applesauce in it? Siphoning is common, it is when the stuff in the jar boils, some small amount leaks out under pressure , and as the jars cool, a vaccum is created sealing the jars. It’s kind of normal. Annoying, but normal.
